Chelas Mexican Kitchen was started by Karla Vasquez, an immigrant from El Salvador. Her parents brought their recipes with them and would serve them up to her nightly as she grew up.

The recipes are what help us keep our title as the best Mexican food in Laguna Niguel. However, we stay far more local for ingredients. Our thought is that we should help support the community that helps support us.
We do that by shopping local for ingredients, putting money into the local economy. We also take advantage of that freshness from ingredients that were grown just an hour or so away, rather than canned ingredients from the other side of the world.
